可可魚當初送我這個 LC 鑄鐵鍋就是希望我來實踐自己在家做麵包的夢想。
一年多以後的今天,終于實踐了。





我們家的爹滴和大女兒 Alison 很愛吃麵包。
對了,去年孩子們的嫲嫲來美5個月,共同生活了些日子,才發現,原來姓何的這家人,都愛吃麵包,尤其要烤到香脆。

Alison 偏愛越南法式麵包,皮脆内鬆的那種輕麵包。外面買的沒有很便宜,可是方便。
這半年來,爹滴工作的新餐館裏的同事
們,酷愛研究美食,也經常帶了不少好料回家讓我們嚐嚐。
最近,他們呢常常研究麵包,爹滴回來常常會唸給我聼。  昨天才想說,好啦,自己來試看看做唄!


上網翻查了一些資料,終于認真讀了食譜,開始和麵團...

方法真的很簡單,發明這個食譜的紐約麵包師傅 Jim  Lahey 說連4嵗小孩都會做的 No-knead bread (免揉麵包)。


做麵包前一天,先把麵糊調好,發酵18個小時,第二天再作烤麵包前的動作。

3杯               中筋或高筋麵粉 (我用的是高筋)
1/4小茶匙      instant yeast
1 1/4小茶匙   鹽
1 5/8杯         水

1-  以上的材料倒進一個大容器裏輕輕快速調勻,鋪上保鮮膜即可。 放在室溫70華氏底下發酵,根本不需要揉。
      麵糊裡含極少量的酵母, 任其長時間室溫發酵,就像麵包師傅說的:Let time do the work!

2-  第二天,18小時後,把發酵成兩三倍大的泡泡麵糰倒入一塊撒了一些麵粉的白色乾淨棉布上,
      隨便對折兩三下整型,再撒上一些麵粉,蓋上棉布再發酵兩個小時(我的才等了半小時,應該多等一會兒會更好)。

3-  烤前半個小時把鑄鐵鍋放進450度華氏的烤箱一起預熱,然後小心打開鍋蓋,千萬避免燙傷,將麵團連同棉布順勢丟入鍋内,蓋上鍋蓋烤約30分鐘。
   (我的才25分鐘就開蓋,所以沒有十分熟)

4-  這個時候麵包已膨脹,表面微微上色,小心取出鍋蓋,繼續烤約15~20分鐘,就可去鍋出爐。
     這時就聽到麵包細碎清脆的爆破收縮聲響,據説這是好麵包的徵兆。





可能我用的是高筋麵粉,剛烤好的表皮真的還蠻脆,不過擱了幾個小時後會變得比較硬。麵包組織坑坑洞洞鬆軟濕潤,是我們喜歡的質感。







1,   第一次的歐洲田園式麵包,只給自己90分。缺點是沒有十分熟,就差那十分鐘。有待改進!

2,  下次試用中筋麵粉看會不會比較鬆軟。 也試加一些葡萄乾、蔓越莓乾或麥片,應該小孩兒不會反對吧,嘿!

3,  美國現在的溫度比較低,室内保持70度,所以最好發酵時間比較長。 要是溫度比較高的話,可以縮短發酵時間,如約12~14小時。

4,  用LC(Le Creuset) 鑄鐵鍋 ,或任何牌子的鑄鐵鍋也行,鑄鐵導熱與儲熱性佳,麵團在加蓋的鐵鍋裡的緊密空間自行釋放水氣,最後達到薄脆效果。

5,  這兩個小瓜,真的很賞臉!

Adapted from Jim Lahey, Sullivan Street Bakery
Time: About 1½ hours plus 14 to 20 hours’ rising

3 cups all-purpose or bread flour, more for dusting
¼ teaspoon instant yeast
1¼ teaspoons salt
Cornmeal or wheat bran as needed.

1. In a large bowl combine flour, yeast and salt. Add 1 5/8 cups water, and stir until blended; dough will be shaggy and sticky. Cover bowl with plastic wrap. Let dough rest at least 12 hours, preferably about 18, at warm room temperature, about 70 degrees.

2. Dough is ready when its surface is dotted with bubbles. Lightly flour a work surface and place dough on it; sprinkle it with a little more flour and fold it over on itself once or twice. Cover loosely with plastic wrap and let rest about 15 minutes.

3. Using just enough flour to keep dough from sticking to work surface or to your fingers, gently and quickly shape dough into a ball. Generously coat a cotton towel (not terry cloth) with flour, wheat bran or cornmeal; put dough seam side down on towel and dust with more flour, bran or cornmeal. Cover with another cotton towel and let rise for about 2 hours. When it is ready, dough will be more than double in size and will not readily spring back when poked with a finger.

4. At least a half-hour before dough is ready, heat oven to 450 degrees. Put a 6- to 8-quart heavy covered pot (cast iron, enamel, Pyrex or ceramic) in oven as it heats. When dough is ready, carefully remove pot from oven. Slide your hand under towel and turn dough over into pot, seam side up; it may look like a mess, but that is O.K. Shake pan once or twice if dough is unevenly distributed; it will straighten out as it bakes. Cover with lid and bake 30 minutes, then remove lid and bake another 15 to 30 minutes, until loaf is beautifully browned. Cool on a rack.

Yield: One 1½-pound loaf.
